Do I have to honor every single detail of contract I signed with roofer?

Had some damage to my main roof and patio roof. Called a “reputable” roofer that quoted me approx $16,000 for everything. But then wrote a “wind damage” estimate to show the insurance company for less than $12,000. I was assured that the owner of the co was an expert in getting more from the insurance company than most people because of his experience and knowledge. I signed the contract under the impression that they would find a way to get all expenses covered. I was then told today whether I have a backup financing plan with HERO or whoever because I should be prepared when the insurance company won’t pay for whatvthe roofer is asking for. So even if I signed the contract, can I just get done what is absolutely necessary and not every single little thing they included in the contract?
