There are many environmentally friendly paints. The main thing to look for in terms of paint being better for the environment are VOC''s. That stands for volatile organic compounds, and they are the toxins released while the paint is drying. Most latex paints are pretty good, but still have oil-based tints to make whatever color that you want.

The rule of thumb is the lower the VOC's, the better for you and the environment. Some examples of this are Sherwin Williams Harmony, Sherwin Williams Pro 200 Zero VOC, Benjamin Moore Natura, Benjamin Moroe Eco-Spec, and Benjami Moore Aura. The nice bi-product is way less smell when you paint.
