How much should it cost to disconnect kitchen sink plumbing then reconnect the plumbing with new faucet?

I was charged $1100.00 to disconnect my kitchen sink plumbing then to reconnect it with a new faucet after my new countertop and sink installation. I also had a 2 year old faucet repaired with parts supplied by the manufacturer under the warranty. While the plumber was disconnecting my sink, he said the shut-off valve, which was installed by the same company 2 years prior did not work, so he cut and capped the line. I was told I would not be charged for repairs to that. I was billed 10 man hours for this job and feel it was excessive. What are your thoughts?
