What does gardening means

Assuming you mean the Search the List category - Lawn and Yard Care (or is it yard and Lawn Care ?) would be for normal spring/fall yard twig and leaf cleanup and lawn mowing.

Landscaping (several subcategories) would be basically for one-time initial installation of landscaping, which might include things like lawn, gardens, shrubs and flowers, decorative yard features like statuary or goldfish pond or such, rock gardens and paths, and hardscaping - pavers and walks and such. Commonly automated watering system installation/maintenance too. Some Landscaping companies also do lawn care and continuing maintenance of shrubs and flower beds and such, many do not emphasize that.

Both the above commonly do snow removal in the winter too, in snowy areas.

Gardening as a category would be more for for your traditional gardener though obviously some overlap and some companies will list in more than one of the above categories. For Gardening think (not to be racist) the prototypical Southern California elderly Japanese gardener who might do mowing and edging of a small lawn, but primarily trims shrubs and ground-reachable parts of trees, maintains and handles planting and seasonal rotation of flower beds and fall bedding in and bulb retrieval and storage (if needed), maybe shapes or does topiary with trees and shrubs, and might maintain a garden plot for you to pickk from. Usually a one-man outfit or maybe a small family business, and generally far more knowledgeable and competent (though not always) about garden and shrub and flower care than your normall lawn mowing guys.
