This can be accomplihed better in person than remotely, however it can be accomplished both ways.

Those are pretty generalized statements, you hopefully have a business plan in place on how you plan to use those services and understand costs associated...especially with exchange licensing! FTP is also something to consider...do you really want to use a protocol that provides zero encryption and every script kiddie can read your password And get access to your files? Possibly using something more along the lines of open source software to provide you the services...but securely and cheaply!

again, your plan has to be put on paper first listing everything you want to accomplish...that will drive your direction. If any professional tries to sell you on something without completely understanding what your needs are....you aren't getting great service (or cheap service in the long run).
