Since you are certain to have framing and siding and drywall or plastering/painting, and almost certainly some roofing and flooring work to install after the removal as well, a Remodeling - General Contractor is the normal choice. He may choose to subcontract the actual removal to a Masonry or Demoition subcontractor, but best to have it all in one contract to improve the coordination on the removal, the protection of the openings, and rapid drying-in of the house (roofing and siding) in the least time possible.

Consider in the course of this what you want put in the space the removed chimneys previously occupied - especially on flooring (where commonly total room floor replacement is needed to match unless you put a decorative element or cabinet or such where the old hearth was) - and if you want the walls closed in after removal (assuming exterior chimney) or put in some windows or a sliding door and deck or balcony or such, because this is a good time to go for that type of upgrade if location in house is suitable.

You can find some prior questions about common cost for the removal in the Home > Chimeny Repair link in Browse Projects at lower left - or put the phrase - remove chimney - into the Ask box and check out the suggested links it gives.
