Advice on unintentional kitchen remodel?Getting new laminate floors, counters, refinishing cabinets

Remodel due to major floor damage from water. Will be having the floors in my greatroom/kitchen & bedroom replaced. Subfloor for part too. I will also be getting new counters & sink, not related to the damage.
I mostly want advice on counters & refinishing cabinets. What is your best advice? Biggest issue you'd want to know about before doing work? Things to look out for?
Will likely paint the cabinets. Thoughts? suggestions? They are solid, I don't want to reface or replace them.
I believe I will be getting granite countertops, know I want them sealed from the get go. Any other dos/don'ts?
I have never had this kind of major work done before, much less so much at once. I will have a general contractor overseeing the project & subcontractors for the counters & cabinets. I believe the contractor will be doing the floors, though that might be subcontracted too.
Thanks in advance. I have the general contractor I plan to use coming tomorrow.
