Am I obligated to sign papers from my roofer for their attorney to sue my ins. co? Consequences if I do or don’t

Insurance co agreed to replace my roof and other repairs and sent a quote and check for the amount of the quote. Final claim from roofer was doubled. Ins co denied additional funds and suggested appraisal/ mediation. Roofer refuse to do this and want me to sign papers for their lawyer to represent “me” in suing them. I am not comfortable doing this. What are my options.
