I have 3 estimates; only one gave itemized costs.

I'm not sure what your asking? Are you inquiring as to why the other contractors did not submit an itemized cost? If so, they probably use a flat rate pricing structure. I like using flate rate for my proposed work. This way everyone is clear on the price before all contracts are signed. Some contractors like to use a Time and Material structure. There are pros and cons to each. Ask the other contractors to clarify their estimates. I'm sure they wouldn't mind enlightening you on the breakdown of your estimate.
