How many shrubs and how high, how fancy (just long branches or shaping or making topiary of them or what), and one-time or periodic ?

Probably in $20/hr range plus or minus $5 or so - but can run from an hour every month or so for maintenance trimming like of hedges to a day a week to maintain topiary at a mansion to several days a couple of times over several months to take untrimmed hedges and shrubs and trim them into general shapes (retangular, round, tapered, lightbulb, etc).

There are specialty shrub trimming companies for manicured yards and topiary and such, most "gardeners" doing lawn mowing plus planting care do normal trimming, and some landscape and some tree trimming companies do it - a few garden centers who sell large trees and shrubs also have or associate with tree and shrub trimming and shaping companies. A normal gardener type might be able to maintenance trimming fine, but for major initial shaping I would recommend an arborist or professional tree trimming company.
