I just had my roof replaced and I am in the process of getting gutters and pavers done. Which first?

By pavers I presume you mean patio or walk or such - on-the-ground or deck pavers.

The general principle in construction is top-down - generally do the higher finish work first so in doing it you do not damage completed work lower down. So - roof, gutters, pavers in that order - doing the pavers last eliminates any risk of scarring of them from roofer or gutter workers dropping things or from their ladders.
