What is the Material cost of a metal roof per square?

This should include backing material, sealant, fasteners, and panels... We are looking for a standard price with which we can evaluate the estimates we're being given.

Sorry - you are out of luck there. Each contractor may select different materials, including not only different manufacturers but also different quality, so you can easily get a 50-100% differenece in materials costs between bidders. Ballpark numbers, the materials cost can run from as low as around $4/SF to $10/SF for a residential job - commonly in the $4-6 range for normal-weight normally used products.

Once you select a roofing product you want and acceptable manufacturer names, does it really matter if one has lower costs but maybe higher labor, whereas another buys pricier material or does not get as good a deal on it but has lower labor costs. Your end result you are looking for is a reroof job to a certain standard - and the bids should be for a completed job.

You want to choose a good contractor, select good materials, and once those are in order then you can think price, and if there are severall equally good bidders, then you can take the lowest QUALIFIED price for the total job.
