What should a plumber present me when starting a job?

We reside in a vintage hi-rise in Chicago IL. The plumber is from Mt.Prospect IL.
How do I verify his license and insurance? I can't find it online anywhere.

For insurance he has to provide you with a copy of his insurance certificate - and if not issued by the company specifically for your job (meaning dated in past couple of days or so), you would have to call them to verify it is still in effect. Ditto for Bonding.
