What time of year is best to trim an apple tree?

I would talk to your local fruit tree selling plant center, or google for your state's Cooperative Extension Service - basically all have documents online about care for both commerical and ornamental/garden varieties and species. I know when out family grew fruit trees (many kinds including apple) the dormant season was considered the best time to trim them, because then you are not stressing them during the bloom and fruit production season. However, in drought areas, you don't want to do anything to them during the drought season - preferable to trim before the drought season so they are having to support less growth.
