Highly variable - because some are removeable without assembling the lock, many factory bonded to the lock mechanism shaft so requires taking the lock partway apart to change them, some locks do not come with other type handles so you would have to buy entirely new locksets and install them.

Also - presumably you are looking at not just the door handles, but also the trim ring which seals to the door and covers up the lock mechanism, to match. And for bathroom/bedroom type with the push-button lock at the side of the shaft, replacement push buttons to match too.

You also don't say from brass to what, o if from han dle to knob or what - most alternatives like Nickel or Stainless will cost a lot more than the original brass handles.

Simplest case, replaceable handles and rings - probably about $15-35/door parts and, in that quantity, probably about $15-25/door labor. This assuming the parts are readily available, which also implies you know the manufacturer on the doorsets, AND that they are all the same or only a couple of models, AND parts are available, AND shipping cost to you is not exhorbitant.

Probably by far your cheapest alternative, especially when you consider finding matching parts and paying to have them changed out - learn to change a lockset out yourself, buy totally new ones that match the you want, and just install them yourself new at about $10 per for simple passage/hall door or dummy knobs/handles, or $20 for simple normal bathroom/bedroom locking type with simple knobs. Handle type generally more like $20-30 each, ditto to stainless/nickel plated.

Or check the backset (distance from center of lock to edge of door) and buy new ones yourself that handle that backset (most are standard sizes, but not all) in bulk at box store or online, then hire locksmith to do installation en-masse.
