OK - say I tell you about $350-450/day - does that really tell you anything - because he might take a couple of days, or a couple of months.

The scope of work for your job is clearly defineable - itemize in the bid how many cabinets are involved (and in what rooms), whether only faces and fronts of doors/drawers are being redone, or faces and both sides of doors/drawer fronts, or complete cabinets including all inside surfaces, and what type(s) of finish. Then get several bids from cabient shops and/or painters for that specific scope of work, as a single bid price. Then you don't risk paying for hours and hours of half-hearted work, and you don't penalize the industrious worker by paying him less than the slow one for the same work. You also totally avoiud the issue of overhead, materials, etc.

Be prepared, if you do not specify strip and sand only for prep, to get bids for veneer overlays also - called resurfacing, because that is generally cheaper. You might also get bids for totally new fronts, doors and drawer fronts and veneeer resurfacing of exposed sides - which is also commonly cheaper than refinishing just because factory replacements are cheaper than a lot of labor in refinishing in many cases.
