There are a couple of types you could be talking about - the free-standing type like Primo that take 5 gallon water bottles on top (like an old- bottled water cooler) and dispense cold and hot water, or the point-of-use hot water dispensers that install under a sink and have a dispenser at the sink - dispensing either separately or through the hot water faucet.

The former cost about $250-400 and installation could run from $200 range tapping off a nearby water faucet and electrical outlet (like a dishwasher or washing machine connections), or more like $200-300 range if new connection and shutoff valve needs to be installed for it - plus additional $200-300 maybe if you need a new electrical outlet for it too.

Under-sink type cost can depend a lot on capacity and local electrical code - some smaller capacity units allow tapping the power off the dishwasher outlet in some code jurisdictions, some require a dedicated circuit from the breaker box for larger capacity units or in some cases for any size unit, so electrical supply alone can run from $0 additional up to as much as $300-500 or even more in concrete or brick houses - plus some hundreds in drywall repair and repainting if there is not open joists access in the basement/crawlspace to run the wiring without breaking through drywall/plaster. The unit itself typically runs $250 for cheap, low capacity ones up to $500 range for more common sized, to $1000 and more for high-capacity ones. Plumber install cost typically around $200-350 I would say, assuming you have adequate space under sink for it to fit conveniently and depending on how easy installing water tap for it is - in some cases you can just divert the tubing to the hot water faucet through the unit, in others requires different arrangement.
