how much should mapping and checking amps of circuit breaker cost

want to figure out what circuit breaker outlets go to and how many amps are on each breaker switch to see how loaded each breaker is

As far as mapping and actual connected loads, you can do that pretty easily. Last time I did this, with about say 20 breakers (circuits) took about 4 hours - so that would be about $150-200 by a handyman IF you trust him to get it right, or about $400-800 by an electrician. This is something you can fairly easily do yourself - with a plug-in electronic circuit tracer, or just with a night light and turning breakers off one by one. Then count up what the loads are, and figure which are on at any one time. As far as breaker adequacy to handle loads, while they should never see more tan 80% of rated capacity, actual required breaker rating by code is based on a totaling of different types of loads and connections and applying factors to them - you can look up how to do that at many electrical supplier and breaker manufacturer websites if you want ot see if your breaker are legal by code.
Remember breakers should not be loaded beyond 80% of rated capacity for any sustained time, and remember large motorized items like reefers and freezers and compressors and large bench power tools have surge starting loads to consider - see manual or starting amperage rating on motor. Check not only loads on individual breakers, but also the loads on the two leads on the panel - you will have to check your panel info on how it is wired to the two live leads - generally odd numbered breakers on one lead, even numbers on other, but not always the case.
