My favorite - DuPont StoneTech Sealer - there are several products under that name, depending on whether it has been sealed or not (where you would use the impregnating version) before, whether you want an "invisible" sealer or basically a gloss covering (which protects against stains better) where you would use the BulletProof version, and whether you are doing a countertop or floor. There are also products for synthetic stones. I recommend the Professional line - costs about twice as much, lasts at least 4 times longer in my experience - even though it is about $35/quart.

Normal generic brand sealers can last far less than a year in frequently wiped areas, name brands generally a couple to several years, a top end professional product probably about 5 years in common use though might need recoating in the heavily used areas like right around the sink and range and toaster and in front of microwave. Of course, use aggressive cleaners and you can take it right off in the first couple of cleanings.
