why can't I sign up for just one month only?

I only want your service for one month but your terms say my monthly charge billed to me monthly.

It likely reads that way because monthly memberships are setup with the convenience of automatic renewal, but you can cancel monthly membership at any time. You can learn more about membership pricing here.
