why does the water from our new whole house water system taste like plastic?

InstAlled a GE system recently; water is soft but has a plastic taste after completely flushingsystem.

Likely the tanks are plastic, and the treatment media may be resin-coated plastic beads. The former taste will go away in a month or two of normal use; if you are tasting the resin or beads (some people notice it, some don't) that will diminish over time but come back full strength every time the media is changed (from monthly to yearly depending on your water quality).

I would try using bottled water to drink for a month or so and see how it goes - like all things new that are plastic, the initial outgassing can be pretty strong.
